Every revolution has a starting point. For pale Provençal rosé — the wine that conquered the world’s terraces, beach clubs, and dinner tables — that starting point is here, in the hills of Pierrefeu-du-Var, at an estate that was once the summer residence of the Archbishops of Toulon.
In the 1980s, Château La Tour de l’Évêque created ‘Pétale de Rose’ — a rosé so pale, so delicate, so different from the dark, heavy rosés of the era that it essentially invented a new category. Every pale Provence rosé you’ve ever drunk owes something to this bottle.
The Original Pale Rosé
The story of Pétale de Rose is the story of a winemaker’s conviction: that rosé could be as refined, as complex, and as worthy of attention as any white or red. The wine is pressed with extraordinary gentleness, yielding a colour barely deeper than a whisper of pink — and a palate of wild strawberry, white flowers, and a mineral finish that speaks of the limestone terroir.
Today, the estate is fully organic and biodynamic, a philosophy that deepens the connection between wine and place. The vines grow among cover crops and wildflowers, sheep graze between the rows, and the cellar works with lunar cycles and minimal intervention.
A Bishop’s Retreat, a Winemaker’s Vision
The property itself is steeped in history: the main building dates from the medieval period, when it served as the bishops’ country retreat. The gardens, the stone walls, and the quiet grandeur of the setting add a layer of atmosphere that elevates the tasting experience.
The range extends beyond rosé: the whites are taut and aromatic, and the reds — from old-vine Syrah and Mourvèdre — have a depth that surprises visitors expecting only pink. Tours are by appointment, intimate, and genuinely informative.
